What is changeover, and why does SMED matter in food production?

A changeover is everything that happens between the last unit of one product and the first good unit of the next: emptying the line, washdown or CIP, allergen removal, swab and ATP verification, parts swaps, and re-setup. In food and beverage plants this can eat a large share of available time, far more than in discrete manufacturing.

SMED (Single-Minute Exchange of Die) reduces that loss by separating internal work, which requires the line stopped, from external work that can run in parallel while the previous batch finishes. Staging clean parts, pre-mixing the next recipe, and printing sanitation SOPs ahead of time all shrink the stopped window.
