What does OEE measure in a food or beverage plant?

OEE (Overall Equipment Effectiveness) is the share of planned production time a line spends making good product at full rate. It is the product of three factors: Availability (uptime versus planned time), Performance (actual speed versus rated speed), and Quality (good units versus total units). World-class is cited at around 85 percent, but many food plants sit well below that.

In food and beverage the losses are specific. Mandatory CIP and sanitation can consume a large slice of a shift on dairy and beverage lines. Allergen and SKU changeovers routinely overrun standard. Add micro-stops, speed drift, and the quality ramp after every restart, and a line that looks healthy on paper is hiding capacity that no capital can buy back.
